How might we contribute to a system that enables profitable businesses while promoting well being soil and people?
110 years ago F. J. Borgbjerg agitated for cooperatives in Denmark. He agitated for the establishment of utility associations and for allowing them, when the customer base was structured, to enable the creation of production associations. The production associations could then sell goods through the user associations. Borgbjerg saw in the cooperative movement a role model. And the hope was that the employee-owned companies could make the same progress as the unit-owned companies.
Today, 110 years later, sales and marketing of goods are still the biggest hindrances to small food producers. And maybe some of the biggest challenges for the conversion of Danish agriculture.
Several companies and associations have tried and tried to create one outlet for small scale agriculture and processing companies: Københavns Fødevarefællesskab, Råhandel, Madmarkedet.dk, Fresh.Land - but none of them have succeeded to an extent of significance. Why not?

How are we influencing consumers everyday food choices in Copenhagen and beyond?
In an age of massive information, what do we learn about food. What do we communicate beyond flavour and quality. How do chefs, producers, farmers, supermarkets, influence the culture around food and the choices consumers make. We will explore the link between trends and sustainable food choices. What role and responsibility do we have in shaping the ways we consume.
